One Tray Sausage + Veg Hash

Ingredients (serves 4)
Cooked sausage slices (360g)
Bacon lardons (100g)
Parmentier potatoes (300g)
Red onion (1x roughly diced)
Red pepper (1x roughly diced)
Eggs (4x)
Sourdough
Salt & pepper
Cooking instructions
1) on a large baking tray lined with baking parchment add your parmentier potatoes & place in a preheated oven set at 200c & cook for 15 mins to give them a headstart.
2) while the potatoes are cooking prep your red onion & red pepper then add to the baking tray with your bacon lardons & sausage slices mixing with spatula. Cook for a further 25 mins.
3) take your tray out of the oven & make four wells. Crack an egg into each of the wells and return to the oven then cook for a further 5 minutes.
4) while its cooking add some sliced sourdough to your toaster.
5) remove tray from the oven & serve ensuring each person gets an egg alongside some sourdough.
