Roast Loin of Pork

Crispy crackling, juicy pork—roast loin perfection! A golden, crunchy crust gives way to tender, flavourful meat, making every bite a feast. A British classic!
Ingredients (serves 6)
2kg Loin of pork (We’ve gone French trimmed to add visual)
Apple Sauce
Sugar
Salt
Pepper
Cooking instructions
- Preheat the oven to 220°C
- Prepare the pork: Pat the pork dry with paper towels and using a sharp knife or Stanley knife, score the joint in parallel lines, taking care not to cut into the meat. Alternatively, you can ask our skilled butchers to score it for you when you order.
- Rub Salt and pepper over pork, trying to get the into all the cracks from scoring.
- Place the in a roasting tray, skin side up and Roast for 25 minutes at 220°C (425°F) to start crisping the skin.
- Reduce the heat to 180°C and continue roasting for about 25–30 minutes per 500g.
- Rest the meat for 15 minutes and serve with Apple sauce and some roasted veg.
