Warming Sausage + Bean Casserole

Ingredients (serves 4)
Cumberland sausage 360g
White onion (1x diced)
Red peppers (2x diced)
Garlic (2 cloves finely choppped)
Rosemary (2 sprigs)
Fresh parsley (small bunch roughly chopped)
Bay leaf (1x)
Butterbeans (1 tin)
Chopped tomatoes (1 tin)
Tomato puree (1 tbsp)
Beef stock cube (1x crumbled)
Worcestershire sauce (1 tbsp)
Brown sugar (1 tbsp)
Olive oil (1tsp)
Salt & pepper to season
Cooking instructions
1) Prepare your veggies. Roughly dice your onion, red peppers & parsley then finely chop your garlic. Add to the base of your slow cooker saving the parsely for later.
2) Weigh out your sausage & link into smaller sausages with the skin on.
3) In a hot pan with olive oil, brown off your sausages. Once you have colour on them, add them to your slow cooker.
4) Add your tomato puree, chopped tomatoes, butterbeans (with liquid), bay leaf, Worcestershire sauce, beef stock cube, brown sugar & rosemary.
5) Mix your ingredients in the pot, set your slow cooker to high and cook for 6 hours.
6) Once cooked, stir through your chopped parsley, salt & pepper then serve.
