Easy Baked Breakfast Bloomer
Ingredients:
4 rashers dry cured bacon
1 tbsp very soft unsalted butter
4 Cranstons Pork link sausages
1 small bloomer loaf
2 fresh eggs
drizzle of olive oil
mushrooms and cherry tomatoes
Method:
Preheat the oven to 200°C, 180°C Fan, Gas Mark 6. Brush a foil lined baking tray lightly with butter. Take a small bloomer loaf and cut in ½ lengthways. Place on tray and brush with more of the softened butter.
Lay 4 rashers of bacon over each half of bloomer. Place on 4 sausages and carefully crack the eggs into the centre of the two sausages.
Place on a couple of mushrooms and cherry tomatoes and drizzle with olive oil.
Bring up the foil around the outside of loaf and bake for 20-30 minutes. When golden brown and cooked through serve with your favourite sauce and the top of the bloomer toasted.
