Black Pudding Sausagemeat Casserole

Ingredients:
500g black pudding sausage meat
1 cooking apple, halved and thinly sliced
150g grated cheese (we used mature cheddar)
6 large potatoes
Milk (for mashed potato)
Butter (for mashed potato)
Salt and pepper, to taste
Method:
- Peel and cut the potatoes into smaller chunks for faster cooking. Place them in a large pot of boiling water and cook for about 10 minutes or until tender when pierced with a fork.
- Drain the boiled potatoes and return them to the pot. Add a generous knob of butter, a splash of milk, and season with salt and pepper to taste. Mash until smooth and creamy.
- Set your oven to 200°C (Gas Mark 6).
- Spread the black pudding sausage meat evenly across the bottom of a casserole dish.
- Arrange the sliced apple on top of the sausage meat in an even layer.
- Sprinkle the grated cheese over the apple slices, creating a generous cheesy layer.
- Top with the mashed potato, spreading it out evenly to cover the entire dish.
- Cover the dish with tin foil and bake in the oven for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the top is golden and slightly crisp.
