Cranstons Roast Potatoes

Ingredients:
-1 kg potatoes
-150 g duck or goose fat
-Salt
-Pepper
-Fresh rosemary
Method:
Preheat the oven to 200°C/fan 180°C/gas 6.
Peel and chunkily cut 1kg potatoes, then par-boil.
Add 150g duck or goose fat to the roasting tray and melt in the oven until piping hot.
Meanwhile, drain the potatoes and shake in a colander to make the potatoes nice and fluffy. Place them in the hot fat and roast for 15 mins, turn, roast for another 15 mins, then turn again.
Sprinkle with salt, pepper, and finely chopped rosemary, and finally, roast for 10-20 mins until golden and crisp.
